I am a legitimate oatmeal cookie monster... I just counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of them yet? (? Watch these bananas? And all of those brown spots? When it comes to baking with bananas, brown = amazing! I ? additional speckly bananas cause they've a lot glowing, bold taste --along with extra natural sweetness! That's the minimum number of brown which I suggest. More is better!
The remaining part of the cookie dough's sweetness comes in a different natural ingredient... Pure maple syrup (like that!) . You would like the type that comes straight from pine trees, which is usually sold in thin glass bottles or squat, round plastic jugs. Skip the pancake syrup and sugar!

If you let the raisins sit while mixing together the cookie dough, then this small trick hydrates them so they're incredibly succulent --and that makes a big difference in these cookies once they're baked!

These oatmeal cookies are tender, chewy, and full of banana flavor! The familiar comfy spices and plump blueberries make these much more irresistible. They will keep for a minumum of one week if stored in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (fermented if mandatory and quantified like that )
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like this)
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated. Let the cookie dough rest for 10 minutes.
With a spoon and spatula, dip the cookie dough into 15 curved scoops on the prepared sheet, and apply to the desired thickness and width by means 20 Easy and Delicious Vegan Cookie Recipes - How to Make Vegan ... of a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the wheat and oats correctly employing this technique or even a kitchen scale. (? That is the one I own and adore!) Too much of either will dry out of the biscuits and render them cakey rather than chewy.
Instant oats are also known as quick-cooking or moment oats. They are available in massive canisters, exactly like old-fashioned oats. They're not those in the tiny flavored packets of oatmeal. To make your own, include the same number of old-fashioned oats to your food processor, and pulse 10-12 days or until the oats will be about 1/4 to ? of their initial size.
For the fermented flour, I recommend the following blend: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, two tablespoons (15g) brown rice bran, as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like that one!) Will also work, if measured like this.
